Immune-Boosting Besan Milk Recipe with Mom’s Special Spice Blend

Despite managing a demanding schedule of teaching 12 yoga classes this week, I’ve been focusing on rest and recovery, which is why I haven’t been as active on the blog as I wanted to be. Today, I want to take a moment to share a delicious and immune-boosting recipe that has been a true lifesaver for me during these hectic times. This warm and comforting besan milk with a hint of my mom’s special spice blend is not only fulfilling but also serves as a satisfying meal replacement.

Note on My Mom’s Special Spice Blend and Tea:

I usually use this spice blend as an alternative to traditional Indian cha or chai. Approximately 6 months ago, I made the decision to give up tea—despite hardly drinking much of it in the first place. The inspiration for this decision came from a powerful discussion at a Khalsa camp, where one of the Bhai Sahibs passionately spoke about how Sikhs should not consume tea. He shared that tea can be addicting and has addicting properties, emphasizing that it’s not meant for humans; he even mentioned that animals were given tea but refused to drink it, while they readily consumed plain milk. Since that day, I’ve been using this spice blend by boiling it in a little water. Once it’s fully boiled, I add milk and then sweetener of choice (usually jaggery). I always strain the spices to get plain milk. However, for this besan milk, it wouldn’t make sense to strain the spices because that would strain the besan too, and the whole point is that this is a besan drink. I left the spices in for this drink, and it was still a delicious drink! I chewed the spices, and it tasted great.

In my family, we emphasize using highest quality ingredients. For example, a couple of months ago, we started sourcing fresh milk directly from a local farm. The farm is known for its commitment to organic and sustainable practices, ensuring the highest quality and freshness. We also source fresh, raw, unpasteurized honey directly from another trusted vendor. And, we always bring turmeric freshly ground from India to ensure the highest quality and most authentic flavour. Quality is of utmost importance to us, and we believe that using the best ingredients ensures that our recipes are not only delicious but also provide the greatest nutritional benefit.

Recipe:

Ingredients:

  • 2 cups of fresh cow’s milk (approximately 5% fat content)
  • 1 tablespoon of desi ghee
  • 2-3 tablespoons of besan (gram flour)
  • 1 tablespoon of raw, unpasteurized honey
  • 1/2 teaspoon of turmeric (for a stronger turmeric flavour and its potential benefits, you can increase this to 3/4 teaspoon if desired)
  • 1/2 teaspoon of mom’s special spice blend (Green Cardamom, Black Cardamom, cinnamon, fennel seeds, and carom seeds)
  • A pinch of black pepper

Instructions:

  • In a small pan, heat 1 tablespoon of desi ghee.
  • Add 2-3 tablespoons of besan to the ghee and roast until it’s toasted.
  • In a saucepan, heat the milk over medium heat.
  • Once the milk is heated, whisk in the roasted besan, turmeric, black pepper, and mom’s special spice blend. Stir continuously to prevent lumps from forming.
  • Allow the mixture to simmer gently for a few minutes, stirring constantly until it reaches a creamy consistency.
  • Remove the besan milk from the heat and stir in the honey until it’s fully dissolved.
  • Pour the besan milk into your favourite mug, sit back, and savour every comforting sip.
